Mango Chilli Chicken Salad Recipe | Ashishh Gupta


A lot of you have expressed an interest in my Mango Chilli Chicken Salad Recipe, so here it is, inspired by the recipe of the queen of cooking, Nigella Lawson.

INGREDIENTS
Serves: 2-3

METRICCUPS
1 mango (cut into approx. 1cm cubes)
1 spring onion (finely chopped)
1 – 2 red chilies (or to taste) deseeded and finely chopped
juice of 2 limes (to taste)
1 cold cooked chicken breast (cut into chunks)
1 little gem lettuce (sliced or shredded)
1 large handful fresh coriander (chopped)
1 teaspoon vegetable oil
4 drops toasted sesame oil

METHOD

1. Mix the mango cubes (with their juice) in a large bowl and add chopped spring onions and chilli. Squeeze in the lime juice (add as per your taste – too tangy or too bland is subjective with lime juice.)

2. Leave the mixture for a bit before you add chunked chicken, lettuce and fresh coriander. Add the oils and serve!
